INGREDIENTS:
2 yellow onion
2 scallions
dash garlic powder, cayenne, and chili powder (to your taste)
26 oz black beans cooked
2T southwest seasoning
4 oz tomato paste
1/2 c low sodium veggie stock
optional toppings:
corn chips or blue corn chips
cheddar
chopped avocado
chipotle sour cream or plain sour cream
Dice onions and slice scallions (separate white and green)
Drain beans over small bowl to reserve liquid
Heat large skillet, drizzle with oil - add onions and whites of scallions (3-4 minutes)
Add Southwest Spice
Stir in tomato paste, garlic powder and chili + cayenne powder (season to taste)
Stir in 1 1/2 c water, veggie stock or concentrate, beans and 1/4 c black bean liquid
Boil and bring to medium heat, stir - about 5-8 minutes
Taste, salt / pepper
